Stuffed Peppers

Stuffed Peppers is one of my husband's favorite thing to eat and it's so simple too. I actually enjoy them as well and I haven't always been a fan of them - especially growing up as a child.

Here is what you need:
4 good sized green peppers (hollowed out)
1 lb of hamburger
1 can of Italian stewed tomatoes
2 cups of cooked rice
1 cup mozzarella cheese
Italian seasoning
Salt and Pepper (to taste)

  • Cook your hamburger and your rice separately until cooked. Add remaining ingredients and stir.
  • Once you have hollowed out your green peppers, I like to place one of the stewed tomatoes at the bottom before you put the mixture in. It adds a nice surprise at the end.
  • Stuff your mixture into the peppers and place mozzarella cheese at the top. 
  • Put in the oven at 375 degrees and cook til the cheese is melted and the peppers are al dente. It takes about 20-25 minutes. You don't want to cook them until they are super soft or it just falls apart when you try to cut into it. :D

Chicken Pasta and Veggies

Okay, I was trying to come up with something that was going to be healthy for dinner and couldn't think of anything, so I decided to go through my cookbooks (I have a ton of them) and saw this recipe for Chicken Catcha-something. It looked good, but I needed to make something of my own variety. After going to the grocery store to stock up on food for my empty fridge, I started to cook. I came up with something that is low in fat, low in carbs and packed full of protein and veggies. Let's just say it will be a staple in my household from now on.

Now, I want to give you fair notice, that you can season your food however you would like. I am huge on seasonings and I like to do it to my taste and liking. So when I say, "add your seasonings". Add as much as you are satisfied with. Even when I follow other recipes, I always end up seasoning to my liking, so I'm not going to give you an exact measure of seasoning, because everyone is different and everyone has different likes.

Chicken Pasta and Veggies
3 good sized chicken breasts
1 green zucchini
1 bag of frozen (or fresh) broccoli
1 handful of mushrooms (use to your liking)
1 hot house tomato (or 2 Roma tomatoes)
1 bag of long spaghetti
Olive Oil
Italian Seasoning
Garlic Seasoning (or you can at 2 chopped up garlic cloves)
Salt and pepper to taste

Simple and easy directions:
Cook the spaghetti and chicken separately. Once the chicken is done, add the veggies and seasonings (unless you want to add the seasonings to the chicken first). Once the veggies are tender, add the cooked spaghetti to the chicken and vegetables and toss in some olive oil. Mix and serve!

Butternut Squash and Apples

This is delicious, simple and healthy too!

I'm getting sick of potatoes and frankly I think a lot of people are, so I have come up with a healthier solution.

My boys are a big fan of squash and I just started trying new ones and so the other day I needed a side dish and thought about mixing squash and apples together. I've seen it somewhere before - probably on one of my cooking shows, but I needed to make it my own.

Basically it's this simple. Slice up a butternut squash into little pieces like you would when you are frying potatoes. Dice up a couple apples (I usually use three good sized apples) and place them in the pan. The only thing really fattening about this is the butter portion to coat the pan, or you can use olive oil.

Place the squash and the apples in the butter on the stove and cook til desired tenderness. I usually sprinkle with a little bit of sugar for some added sweetness and some sea salt.

Voila! A great side dish to any meal you are having for dinner.
