Chicken Pasta and Veggies

Okay, I was trying to come up with something that was going to be healthy for dinner and couldn't think of anything, so I decided to go through my cookbooks (I have a ton of them) and saw this recipe for Chicken Catcha-something. It looked good, but I needed to make something of my own variety. After going to the grocery store to stock up on food for my empty fridge, I started to cook. I came up with something that is low in fat, low in carbs and packed full of protein and veggies. Let's just say it will be a staple in my household from now on.

Now, I want to give you fair notice, that you can season your food however you would like. I am huge on seasonings and I like to do it to my taste and liking. So when I say, "add your seasonings". Add as much as you are satisfied with. Even when I follow other recipes, I always end up seasoning to my liking, so I'm not going to give you an exact measure of seasoning, because everyone is different and everyone has different likes.

Chicken Pasta and Veggies
3 good sized chicken breasts
1 green zucchini
1 bag of frozen (or fresh) broccoli
1 handful of mushrooms (use to your liking)
1 hot house tomato (or 2 Roma tomatoes)
1 bag of long spaghetti
Olive Oil
Italian Seasoning
Garlic Seasoning (or you can at 2 chopped up garlic cloves)
Salt and pepper to taste

Simple and easy directions:
Cook the spaghetti and chicken separately. Once the chicken is done, add the veggies and seasonings (unless you want to add the seasonings to the chicken first). Once the veggies are tender, add the cooked spaghetti to the chicken and vegetables and toss in some olive oil. Mix and serve!
