Chicken Pasta and Veggies

Okay, I was trying to come up with something that was going to be healthy for dinner and couldn't think of anything, so I decided to go through my cookbooks (I have a ton of them) and saw this recipe for Chicken Catcha-something. It looked good, but I needed to make something of my own variety. After going to the grocery store to stock up on food for my empty fridge, I started to cook. I came up with something that is low in fat, low in carbs and packed full of protein and veggies. Let's just say it will be a staple in my household from now on.

Now, I want to give you fair notice, that you can season your food however you would like. I am huge on seasonings and I like to do it to my taste and liking. So when I say, "add your seasonings". Add as much as you are satisfied with. Even when I follow other recipes, I always end up seasoning to my liking, so I'm not going to give you an exact measure of seasoning, because everyone is different and everyone has different likes.

Chicken Pasta and Veggies
3 good sized chicken breasts
1 green zucchini
1 bag of frozen (or fresh) broccoli
1 handful of mushrooms (use to your liking)
1 hot house tomato (or 2 Roma tomatoes)
1 bag of long spaghetti
Olive Oil
Italian Seasoning
Garlic Seasoning (or you can at 2 chopped up garlic cloves)
Salt and pepper to taste

Simple and easy directions:
Cook the spaghetti and chicken separately. Once the chicken is done, add the veggies and seasonings (unless you want to add the seasonings to the chicken first). Once the veggies are tender, add the cooked spaghetti to the chicken and vegetables and toss in some olive oil. Mix and serve!

Enjoy!

Butternut Squash and Apples

This is delicious, simple and healthy too!

I'm getting sick of potatoes and frankly I think a lot of people are, so I have come up with a healthier solution.

My boys are a big fan of squash and I just started trying new ones and so the other day I needed a side dish and thought about mixing squash and apples together. I've seen it somewhere before - probably on one of my cooking shows, but I needed to make it my own.

Basically it's this simple. Slice up a butternut squash into little pieces like you would when you are frying potatoes. Dice up a couple apples (I usually use three good sized apples) and place them in the pan. The only thing really fattening about this is the butter portion to coat the pan, or you can use olive oil.

Place the squash and the apples in the butter on the stove and cook til desired tenderness. I usually sprinkle with a little bit of sugar for some added sweetness and some sea salt.

Voila! A great side dish to any meal you are having for dinner.

Here is the final dish before hitting the plate:
ENJOY!

"Not So Philly" Steak and Pepper Soup

This is one of my go-to dishes when I can't think of something to make. One would ask how I came up with this dish and I would simply tell them - on accident.

I didn't know what to make for dinner one night, so I was going through our cupboards and found a few items and added stuff to it. This is pretty simple and kinda resembles a philly cheese steak sandwich if you like them.

Here you go:

"Not So Philly" Steak and Pepper Soup
1 big top sirloin steak (any size will depending on how much meat you want)
1 large can of cream of mushroom soup
1/2 of that large can of milk
1 green bell pepper
1/2 yellow or white onion
2 tbls of Philadelphia cooking cream cheese
white rice or egg noodles
Seasoning Salt (for extra flavor)

This is pretty simple:
Slice your sirloin steak into thin strips, season any way you'd like and cook until they are completely done. In the same pan and flavorings from the meat, add the chopped up green pepper (I like to make into big chunks or strips) and diced up onion. Mix together and cook for about 5 minutes. Add your cream of mushroom soup and milk to the mix and stir. Cook on medium heat for about 15 minutes or until the green peppers are done the way you like (we like them a little al dente). Add the cooking cream cheese and stir. Once the cream cheese is melted and mixed in, your soup is done.

While you are making your mix, you can cook up some white rice or egg noodles to put under your soup. Or, you can simply eat it just the way it is. We like to add rice with ours for that added extra goodness of carbs that we need.

You can serve this with garlic bread, or we like to serve it with a side of green beans. :D

Enjoy!

Fruit Dip

Well, I always like to start off with the best dip in the whole world. You don't need a lot of ingredients - in fact, just two - but seriously it's the best dip around!

FRUIT DIP~
1 brick of cream cheese
1 jar of marshmallow fluff

Mix together in a bowl using a hand mixer until smooth. Cut up fruit and enjoy! This is one of the easiest party dishes in the world. So if you need something quick, use this recipe!

Regrouping...

For those of you reading this, I just want to let you know I'm going to try and stay up on this as much as possible. I have two little boys (under 2) and they keep me seriously busy! I had a cooking blog once before, but I decided I wanted to try something different and see what we can do with this one. So if you had my old address for my cooking blog, please delete it and use this one: www.cookinwithsnort.blogspot.com

I'm going to try and have as much fun with this blog as possible, so hopefully you will enjoy it too. If there is something you would like to see on here, please let me know and I can post it or at least look up a recipe that might look good :D...

Tasty Eating!!
